Pho

100g soba noodles, cooked as per instructions 50g bean sprouts 
1 spring onion, sliced 
1 chili, sliced and seeds removed (or not) 
2 cups vegetable stock 100g tofu, drained and cubed (optional) 
While the noodles are cooking, heat up the stock in a pan, when it is nearly boiling, pour into your bowl; add the noodles, bean sprouts and onion. Sprinkle the chili on top and coriander if you like it.  
This is the basic recipe; feel free to add mushrooms, carrots and capsicums to boost the flavour. 
You can also add soy sauce and chili sauce if you want a more intense dinner.  

Serves 1  
For the meat eater add cooked steak or chicken or seafood when you add in your vegetables.
