Dahl

1 tbsp olive oil (or coconut) 
1 cup dried red lentils 
1 tbsp cumin 
1 tbsp turmeric 
1 tsp garam masala 
1 tsp dried chili flakes (or fresh or even leave out if you don’t like spicy food) 
1 onion, finely diced 
1 tbsp garlic, crushed 
1 litre vegetable stock 
Heat the oil in a large pan; add the lentils, spices, onion and garlic. Fry until the onion is soft. Add the stock and cook over a low heat for 1 hour, stir occasionally to prevent it from sticking.  

Serves 3 
I made vegetable kebabs brushed with curry paste to make this into a meal.
